Garlic Beef Enchiladas

Ingredients

  • Sauce:
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 Tbsp flour
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp sage
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1-15 oz can tomato sauce
  • 1/2 c water
  • 4 to 6 garlic cloves, minced
  • 1/3 c margarine
  • 1/2 c flour
  • 1-14.5 oz can beef broth
  • 1-15 oz can tomato sauce
  • 1-2 tsp chili powder
  • 1-2 tsp cumin
  • 1/2 tsp sage
  • 1/2 tsp salt
  • 10 flour tortillas
  • 2-8 oz c shredded Co-Jack Cheese

Preparation

Step 1

In a saucepan cook beef and onion; drain. Add flour and seasonings; mix well. Stir in tomato sauce & water and bring to a boil. Reduce heat, cover & simmer for 15 minutes.

In another saucepan saute garlic in butter until tender. Stir in flour until blended. Gradually stir in broth; bring to a boil. Cook and stir until bubbly. Stir in tomato sauce & seasonings; heat through. Pour about 1 1/2 c sauce into ungreased 13x9x2 pan. Fill tortillas with beef mixture and cheese. Roll up and place seam side down. Top with remaining sauce. Cover and bake at 350 for 30-35 minutes. Sprinkle with remaining cheese. Bake uncovered for 10-15 minutes or until cheese is melted.
