BEET PICKLES {mom}

Ingredients

  • 2 cups sugar {or splenda}
  • 1.5 cups vinegar
  • 1/2 cup water
  • 1/4 teaspoons salt
  • 24 small beets

Preparation

Step 1

Boil beets with 3” stem for 20-30 minutes. Peel and cut.

Heat vinegar, water and salt to a boil, simmer 20 minutes. Add beets and simmer 5 minutes. Remove from heat, stir in sweetener.

Pack in sterile canning jars, leaving ¼” headspace. Hot water bath 30 minutes.
