Ingredients

  • 3 qt. tomatoes, core, peel, chop {about 18}
  • 3 cups celery, chopped
  • 2 cups onions, chopped
  • 1 red bell pepper, chopped
  • 1/4 cup canning salt
  • 3 cups brown sugar {24oz}
  • 1/3 cup mustard seed
  • 1 teaspoon cinnamon
  • 3/4 teaspoon allspice
  • 3/4 teaspoon cloves
  • 1 qt. 5 % acidity vinegar

Preparation

Step 1

Combine tomatoes, celery, onions, red pepper and salt in a large sauce pot. Let stand 2 hours.

Add sugar, spices and vinegar to chopped veggies; cook until thickened, about 45 min.

Ladle into hot canning jars, leaving ¼” headspace, hot water bath 15 minutes.
