- 2 carrots
- 2 parsnips
- 1 rutabaga
- (all cut in 2" cubes)
- 1/2 onion, sliced
- 1/4 cup olive oil
- 1-2 tsp balsamic vinegar
- 1/4 cup parsley
- salt & pepper

Step 1
Preheat oven to 400 deg. Place vegetables in casserole dish. Stir broth, oil, vinegar and salt & pepper together. Pour over vegetables. Cover and bake for 30-40 minutes. Uncover and baste. Bake 10 minutes longer. Garnish with parsley.
