Ingredients
- 1 cup graham cracker crumbs
- 2 tbl margarine melted
- 2 8 oz pkg cream cheese softened
- 1/2 cup sugar
- 1 tbl lemon juice
- 1 tsp lemon rind
- 1/2 tsp vanilla
- 2 eggs separated
Preparation
Step 1
Combine crumbs & margarine. Press onto bottom of 9 inch springform pan. Bake at 325 degrees for 10 mins. Combine cream cheese, sugar, juice rind & vanilla mixing at medium speed on electric mixer till well blended. Add egg yolks one at a time mixing wll after each addition. Fold in stiffly beaten egg whites. Pour over crust. Bake at 300 degrees for 45 mins. Serve with fresh fruit or cherry pie filling.
