Ingredients
- 1/3 cup light brown sugar, firmly packed
- 2 1/4 tsp cinnamon
- 2 1/4 cups all purpose flour
- 1 tbsp Baking powder
- 1/2 tsp salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 cup milk (can use evaporated)
- 1/3 cup vegetable oil (Crisco)
- cinnamon-flavored baking chips (optional)
Preparation
Step 1
1. In a small bowl with snap-on lid mix together brown sugar and cinnamon. Stir together until well mixed. Snap on lid. Set aside.
2. Preheat oven to 350F. Lightly grease 9x5" baking pan with solid shortening. Set aside. Wrap baking sheet in heavy-duty aluminum foil and set aside.
3. In large mixing bowl sift flour, baking powder, salt and 3/4 cup sugar. In measuring cup mix beaten egg, milk and oil with fork until combined. Add to dry ingredients in large mixing bowl until just mixed*Add cinnamon-flavored baking chips and/or plumped raisins(drained well and coated with 1/2 teaspoon flour) to dough and mix in well.
4. Spoon half of batter into prepared pan. Sprinkle with 2 1/2 tbsp reserved cinnamon sugar randomly over top of batter. Pour rest of batter into pan on top of cinnamon/sugar mixture. Sprinkle with rest of cinnamon/sugar mixture over top of batter. Use a butter knife to cut into both batters in twisted motion round and about. Do not touch bottom of pan. Press oatmeal streusel into dough firmly and gently. Mist with water if desired.
5. Place loaf pan on baking sheet and place both into preheated oven on middle rack and bake for 35-45 mins or until bread test done with wooden pick inserted in middle comes out clean. During last 10 mins of baking time you may need a foil sheet tent to prevent over browning.
6. Remove bread from oven and cool on baking sheet 10 mins. Remove hot bread from baking pan carefully before wrapping bread in plastic wrap. Then wrap loaf in aluminum foil or put in zip-lock plastic bag. Let rest overnight or 24 hours for flavors to meld. Lay loaf on side and slice with sharp serrated blade. Warm bread slice in microwave oven, buttered or not.
