English Mint Sauce

Ingredients

  • 1 cup finely chopped fresh mint leaves
  • 2 cups malt vinegar
  • 1/4 cup sugar

Preparation

Step 1

Rinse mint, strip from stems. Place in a processor or blender with 1/4 cup of the vinegar. Process until the mint is the right size.

Bring vinegar to a simmer in a small saucepan. Add sugar and mint.

Simmer for 20 minutes.

Check for flavour and add sugar if you want it sweeter, or water if it's too sweet.

Put in a jar and refrigerate.

Keeps for 8 months in the refrigerator.
