Ingredients

  • 1 tablespoon olive oil
  • 6 (6-oz.) boneless skinless chicken breast halves
  • 3/4 teaspoon thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 3/4 cup plus 1 tablespoon water, divided
  • 1 1/2 tablespoons cornstarch
  • 3 tablespoons chopped parsley

Preparation

Step 1

Heat the oil in a skillet with a tight-fitting lid over medium heat; add chicken and cook for 10 minutes or until slightly browned, turning once. In a cup, combine thyme, garlic powder, onion powder, salt and pepper; sprinkle over chicken. Remove chicken from skillet and keep warm. Add 3/4 cup of water to the skillet, bring to a boil and whisk up all of the browned bits from the bottom of the pan. Return chicken to the skillet, reduce heat, cover and simmer for 10 to 20 minutes, depending on thickness of chicken. Remove chicken from skillet and keep warm. In a cup, combine cornstarch and remaining 1 tablespoon of water; add to pan juices and whisk mixture constantly until thickened and translucent. Pour sauce over chicken and sprinkle with parsley.

SERVING SUGGESTION: Steamed red potatoes and steamed asparagus.
