Ingredients

  • 1 cup heavy cream mixed with 1/2 cup milk
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 3/4 cup corn syrup
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 2 tblsp butter

Preparation

Step 1

In a large heavy saucepan mix 3/4 cup Cream mixture, sugars and salt. Bring to a boil over medium heat, stirring to dissolve sugars. Set candy thermometer in the pan and cook syrup, stirring occasionally, to 234* or soft ball stage. Very slowly add the remaining cream mixture so the boil is sustained. Cook, stirring occasionally, to 244 or firm ball. Remove from heat and stir in vanilla and butter. Pour into a buttered pan to set.
