Ingredients

  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon freshly ground black pepper
  • 4 (6-oz.) boneless skinless chicken breast halves, pounded thin
  • 1 tablespoon olive oil
  • 4 whole wheat burger buns, split and lightly toasted
  • 4 green leaf lettuce leaves
  • 4 slices tomato

Preparation

Step 1

In a shallow dish, combine first 7 ingredients (cayenne pepper through black pepper). Dredge chicken in seasoning mixture; set aside. In a large skillet, heat the olive oil over medium-high heat; add seasoned chicken and cook until seasoning is blackened; turn and cook until chicken is cooked through, 5 to 6 minutes per side. Serve chicken on burger buns topped with lettuce and a slice of tomato.

SERVING SUGGESTION: Sweet Potato Fingers (peel and cut sweet potatoes into “fries”, toss with olive oil, chili powder, garlic powder, salt and pepper and bake on a cookie sheet in a preheated 425-degree oven, turning once). Add a relish tray of baby carrots, cherry tomatoes and sugar snap beans.
