Ingredients
- INGREDIENTS:
- 1 tablespoon vegetable oil
- 1 1/2 pounds boneless skinless chicken breast meat, cut into strips
- 2 cloves garlic, pressed
- 1/4 cup lime juice
- 1/4 teaspoon chili powder
- 1/2 teaspoon oregano
- 1/4 teaspoon thyme
- 1/2 teaspoon ground cumin
- 1/4 teaspoon freshly ground black pepper
- 3/4 cup sliced red onion
- 1 medium red bell pepper, seeded, de-ribbed and cut into strips
- 8 corn tortillas, warmed
- SUGGESTED GARNISHES (optional):
- Salsa
- Low fat sour cream
- Chopped avocado
- Chopped cilantro
- Chopped green onion
- Low fat shredded Cheddar cheese

COOKING INSTRUCTIONS:
In a large skillet, heat oil over high heat. Add chicken and garlic; sauté for 2 to 3 minutes, or until chicken is browned. Add lime juice, spices, onion and red bell pepper. Cook for 2 to 3 minutes over medium heat, stirring constantly. Remove from heat and cover to keep warm. Warm tortillas and fill with chicken mixture; garnish as desired.
SERVING SUGGESTION: Warmed (drained and rinsed or homemade) black beans and a big salad tossed with Easy Balsamic Vinaigrette (see recipe below).
