Ingredients
- 1 (2-1/2 to 3 lb.) fryer, cut up
- 2 T butter
- 1 cup whiskey
- 3 cups sliced mushrooms (8 oz.)
- 1/4 cup sliced leeks or green onions
- 1/2 cup half and half
- 2 T flour
- 1 T lemon juice
- 2 t whiskey

Method:
Season washed and dried chicken with salt and pepper. Brown chicken in butter in skillet, for 15 minutes. Add one cup whiskey to pan; cover and simmer 30 to 35 minutes, until chicken is cooked. Remove chicken and keep warm. Skim fat from pan juices. Add water to juices to measure 2/3 cup liquid. Add mushrooms and onions. Cook until onions are tender. Combine cream and flour; add to skillet. Cook until thick. Remove from heat and stir in lemon juice and 2 t whiskey. Spoon over chicken and serve.
