PORK CHOPS WITH SWEET MUSTARD SAUCE

Ingredients

  • 1/4 cup cider vinegar
  • 1/4 cup medium red onion, thinly sliced, plus 1/3 cup finely chopped
  • 1 tablespoon olive oil4 (5-ounce) well-trimmed boneless pork chops
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup reduced-fat sour cream
  • 1/4 cup Dijon mustard
  • 2 1/2 tablespoons peach or apricot jam

Preparation

Step 1

In a shallow dish, pour vinegar over sliced onions. Marinate 10 minutes or until ready to serve. Meanwhile, heat oil in a large nonstick skillet on medium-high. Season pork with salt and pepper on both sides. Add to skillet and cook, turning once, 7 or 8 minutes or until browned and cooked through. While pork cooks, mix sour cream, mustard, jam and chopped onion until blended. Serve on pork and top with the pickled onions. (Adapted from Woman's Day magazine.)
