Sour Cream Coffee Cake

Ingredients

  • 1 cup butter or margarine, softened
  • 2 cups plus 4 tsp sugar
  • 2 eggs
  • 1 cup sour cream
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup packed brown sugar
  • 1 cup pecans, finely chopped
  • 1/2 tsp cinnamon

Preparation

Step 1

1. Cream butter in mixing bowl until light. Add granulated sugar and beat until fluffy. Beat in eggs. Add sour cream, flour, baking powder, vanilla and salt and mix well. Mix the brown sugar, pecans and cinnamon in a bowl. Mix well.

2. Grease a Bundt pan and sprinkle with some of the brown sugar mixture, shaking out and reserving the excess. Layer the batter and remaining brown sugar mixture one half at a time in prepared Bundt pan. Press the top layer of brown sugar lightly into the batter.

3. Bake at 350F for 60-65 mins or until cake tests done. Cool in pan for several mins. Invert onto a wire rack to cool completely.
