Ham and Corn Chowder

Ingredients

  • 6 slices of bacon, chopped
  • 1 cup diced white onion
  • 1 cup diced clery
  • 1/4 cup flour
  • 4 oz cubed ham
  • 1 1/2 cups of corn
  • 2 cups diced raw potato
  • 6 cups chicken stock
  • 1/2 cup cream or milk (optional)
  • salt and pepper

Preparation

Step 1

Saute bacon in a large pot until crispy. Remove and drain on paper towels. Discard all but 2 tbsp bacon fat.

Saute onions and celery until translucent

Add the flour making a raux and cook for 2 mins

Add chicken stock slowly, when flour has dissolved, add the potatoes, corn and ham.

Simmer 20-30 mins. add the bacon

Use potato flakes to thicken soup.

Salt and pepper to taste
