Ingredients
- 1/2 baguette, 1/2” diagonal slices
- 1/2 onion, finely chopped
- 3 tablespoons olive oil
- 1/4 cup grated parmesan cheese {1oz}
- 1 large clove garlic, peeled
- 2 tablespoon chopped cilantro
- 1 clove garlic, finely chopped
- 2 tablespoons lime juice
- 2 med ripe tomatoes, chopped, seeded
- 1/4 teaspoon salt
- 1 avocado, chopped
- 1/4 teaspoon black pepper
Preparation
Step 1
Heat oven to 350°F.
Lightly brush both sides of bread slices with olive oil. Toast on baking sheet for about 4 minutes per sides. Remove from oven and rub 1 side with the whole clove of garlic. Let cool.
In medium bowl, mix chopped garlic, tomatoes, avocado, onion, cheese, cilantro, lime juice, salt, pepper and remaining 1 tablespoon oil. Cover and refrigerate 30 minutes.
Top each baguette slice with a scant ¼ cup tomato mixture and serve.
