Smoked Turkey Rollups

Ingredients

  • 6 flour tortillas
  • 1 (8oz) block of cream cheese
  • 1/2 cup shredded or chopped cheddar
  • 1/4 cup chopped onion
  • 1 cup smoked turkey or leftover chicken
  • 2 cups fresh spinach
  • 1 tomato diced
  • 1 can ortega chilis
  • toothpicks

Preparation

Step 1

1. Put cream cheese, cheddar cheese, onion and turkey into a food processor or blender, blend on high for about 3 mins or until it is all a dip like consistency, then let sit.

2. Take the tortillas and spread the mixture onto each tortilla, then put some of the spinach leaves on top of the mixture, then some of the chili's and some of the tomato, then roll the tortilla up and secure with toothpicks, and put onto a cookie sheet and do this with each tortilla, when all are rolled and secure and on the cookie sheet.

3. Let chill for about 2 hours, but overnight is best, once they are chilled, slice each tortilla jellyroll style into quarters then put on a tray and serve, these are soo yummy!
