Italian Tomato Sauce

Ingredients
- 1 Tbsp. Extra Virgin Olive Oil
- 1 Sweet Onion, roughly chopped
- 3 Cloves Garlic, minced
- 1/3 Cup Red Wine
- 1 Tbsp. (generous) Balsamic Vinegar
- 1 Tbsp. Raw Sugar
- 1 tsp. Dried Oregano
- 1/2 tsp. Dried Thyme
- 1 28oz. Can Crushed Tomatoes (preferably low sodium)
- 1 28oz. Can Whole Tomatoes (preferably low sodium), roughly chopped
- 1/4 Cup Fresh Basil, Chopped
- Red Pepper Flakes, Salt and Pepper to taste

Step 1
Pour oil into large sauce pan on medium heat until shimmering. Add onions and caramelize to deep golden brown.
Add garlic and cook for a few minutes or until fragrant. Add red wine and reduce.
Add the rest of the ingredients and simmer to desired consistency and flavor, checking for any taste alterations.
Note- I like my sauce with lots of BIG chunks of tomato, if you prefer a smooth sauce simply pour in batches into a food processor or blender and blend until smooth or use 2 cans of crushed tomatoes and omit the can of whole tomatoes.
