ROASTED GRAPE TOMATO AND RICOTTA BRUSCHETTA

  • 1 baguette
  • Fresh ricotta
  • Olive oil
  • Roasted grape tomatoes

Preparation

Step 1

Cut baguette into even slices about 1"thick. Brush with olive oil and grill or broil until toasted. Top with about 1 tablespoon of fresh ricotta. Sprinkle with a good finishing salt, such as a gray salt and pile high with roasted tomatoes as a quick appetizer or lunch.
