Ingredients

  • marinade:

  • 3

    chipotle chiles with adobo sauce

    bunch fresh cilantro

  • 1

    6 oz can tomato paste 1/4 cup fresh lime juice

  • 2

    cups fresh orange juice

  • 1/2

    cup brown sugar

  • 2

    tbsp honey

  • 1/2

    tsp kosher salt

    cloves fresh garlic

  • steak 4 lbs

  • fire roasted tomato sauce

  • 8

    large tomatoes

  • 1

    medium brown onion

  • i cup fresh garlic roasted (or from jar)

  • 1

    bunch fresh cilantro

  • 1 1/2

    tbsp balsamic vinegar

  • 1/4

    tsp kosher salt

  • 1/4

    tsp freshly ground pepper

Directions

1 make the marinade. puree all ingredients in blender till smooth. put steak in large bowl and cover with marinade 2 make fire roasted tomato sauce. on a grill, open flame, or in a 500 degree oven, burn the outside of the tomatoes and onion. when onions cook the layers begin to peel off. keep peeling off the layers and cooking the rest. put the charred onion and tomato in o a medium sauce pot with the garlic, cilantro and balsamic vinegar and heat on lowl puree in a blender until smooth and season with salt, and pepper and a pinch of sugar 3 grill the steak to desired doneness, slice, and serve with the fire roasted sauce. bryce served the marinade as a sauce adding mango juice instead of orange juice and reducing by one cup
