Chocolate Orange Shortbread

Ingredients

  • 2 cups unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp orange extract
  • 4 1/4 cups flour
  • 1 tsp salt
  • 2 tbsp or more grated orange zest
  • 1 cup miniature semisweet chocolate chips
  • Powdered sugar

Preparation

Step 1

1. Cream butter and powdered sugar in mixer bowl until light and fluffy. Beat in orange extract. Add the flour, salt and orange zest gradually, mixing well after each addition until soft dough forms. Stir in chocolate chips.

2. For larger cookies, divide dough into 12 equal pieces. Shape into 1/4" thick circles or squares on an ungreased cookie sheet. Crimp edges with fork dipped in powdered sugar and score with a knife. For small cookies, shape into balls and place on ungreased cookie sheet. Flatten with a glass. Crimp edges with a fork dipped in powdered sugar.

3. Bake at 350F for 20-25 mins or until very light brown. Let stand until cool. Watch these cookies carefully. They burn quickly.
