Nacho Beef Dinner

Ingredients

  • 1 lb ground beef
  • 1 ⁄2 large sweet onion, chopped
  • 1 packet taco seasoning
  • 1 cup corn (optional)
  • 1 cup canned black beans, drained and rinsed (optional)
  • 1 med. tomato, chopped
  • 1 pkg Mexican or nacho flavored rice (Water)
  • 1 cup cheddar cheese
  • sour cream(optional)
  • tortilla chips (optional)

Preparation

Step 1

Brown ground beef & onions in large skillet on med high. Drain fat.Add 1 T taco seasoning. Stir in rice & amount of water on pkg directions, add corn and black beans & bring to boil. Turn heat to low & simmer covered for 7 min or by pkg directions. Remove from heat and put in serving bowl. Add chopped tomatoes. Sprinkle cheese on top.
Serve sour cream and tortilla chips on side.
