Nicki's Clam Chowder

Ingredients

  • 6 slices bacon, chopped
  • 3 Tbsp butter
  • 1 tsp. garlic
  • 2 cans of clams
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 1 stick celery, chopped
  • S&P
  • 2 Tbsp. dried parsley
  • 1 pint light cream
  • 3/4 litre whole milk
  • 1/4 cup butter

Preparation

Step 1

Cook bacon until crisp. Drain and set aside.

Drain clams setting aside the liquid.

In a large stockpot, fry potatoes, onions and celery in 3 tablespoons butter. When potatoes are partially cooked, add drained clams and fry for 5 minutes.

Add clam juice and garlic to stockpot and cook on low until potatoes are tender. Check for liquid.

Before serving, add bacon, salt and pepper, parsley, milk, cream and butter. Heat and serve. DO NOT BOIL.
