Ingredients
- 8 oz uncooked fettuccine
- 1 c fresh broccoli florets
- 1 med sweet red pepper, julienned
- 1 med carrot, sliced
- 1/2 c sliced mushrooms
- 1/4 c celery
- 1 garlic clove, minced
- 1 T olive oil
- 3/4 c V8 juice
- 1/4 c minced fresh basil
- 1 c frozen peas, thawed
- 1/2 t salt
- 1/8 t pepper
- 2 T Parmesan cheese

Preparation
Step 1
Cook fettaccine according to pkg directions. Meanwhile in a large nonstick skillet,k saute broccoli, red pepper, carrot, mushrooms, celery and garlic in oil for 3 min.
Add juice and basil, bring to a boil. Reduce heat, simmer uncovered for 3 min. Stir in the peas, salt and pepper. simmer 2 min longer or until peas are tender.
Drain fettuccine,add to begetable mix and toss to coat. sprinkle with cheese
