Antipasto Salad

Ingredients

  • 1 pkg (12 oz) spiral macaroni
  • 1 1/2 cups sliced black olives
  • 1 cup chopped green or red bell pepper
  • 1 cup carrots-julienne cut
  • 1/4 lb hard salami; cut into strips
  • 1 small red onion; chopped
  • 1 (14 oz) can of artichoke bottoms-drained; cut into dice-size pieces
  • 1/3 to 1/2 cup parmesan cheese-grated
  • 1 tbsp finely chopped parsley
  • 1 tbsp. Italian Seasoning
  • 3/4 to 1 cup Italian salad dressing
  • salt and white pepper to taste

Preparation

Step 1

Cook macroni according to package directions; rinse with cold water until cooled.

Combine other ingredients; then add macaroni and toss well. Serve warm or cold.
