*Italian Pasta Salad
- 1 pound pasta, any shape
- 1 cup cherry tomatoes, cut in half
- 1 sweet red pepper
- 1 can artichoke hearts
- 1/2 lb black olives, cut in half
- 6 green onions
- 2 tablespoons red wine vinegar
- 2 tablespoons balsamic vinegar
- 7 tablespoons extra virgin olive oil
- juice of 1 1/2 lemons
- salt and pepper to taste
Preparation time 15mins
Cooking time 30mins
In a large pot, bring salted water to a boil and add pasta. Cook until al dente and drain.
In a jar, shake together lemon juice, olive oil, balsamic vinegar, and red wine vinegar to make the dressing.
Chop green onions and place in large bowl. Add olive. Drain artichoke hearts and cut them into quarters. Add to the bowl.
Add thinly sliced red pepper to bowl. Add cooked, drained pasta.
Pour dressing over and mix well. Add tomatoes and mix again.
Finish off with a pinch of salt and pepper to taste.
