Ingredients

  • 4 potatoes, cooked and mashed
  • 1 (10oz) pkg. frozen chopped spinach, thawed adn well- drained
  • 2 eggs
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cayenne pepper
  • 1 C. grated pepper jack cheese
  • 1/2 C. flour
  • Salt adn pepper to taste
  • Cooking spray

Step 1

Lightly brush baking sheet with oil or cooking spray; set aside. In medium bowl, combine potaotes, spinach, and eggs. Beat with mixer until well blended. Add nutmeg and cayenne pepper. Mix. Add cheese and 4 Tbs. of flour. Stri until flour is well blended. Spread the remaining flour into glass plate and seaseon with salt and pepper. Using 2 teaspoons, form the spinach mixture into 1" balls. Drop the balls into the flour covered plate. roll balls in flour to coat and plavce on prepared baking sheet. Place tray in fridge for 20 mins before baking. Preheat oven to 450. remove balls from fridge; spray lightly with cooking spray. Bake 12-14 mins or until golden brown and firm to touch. Serve plain or sprinkle with lemon juice.
