Raspberry Lemonade Popsicles

Ingredients

  • Lemonade Layer
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 5 tablespoons sugar
  • 1 1/3 cups yogurt, either plain or vanilla (I used vanilla)
  • Raspberry Layer
  • 1 pint fresh raspberries (2 small plastic containers, or 1 big plastic container)
  • 1/4 cup sugar
  • 2 tablespoons water
  • 1 teaspoon lemon juice
  • 1 cup yogurt, vanilla or plain

Preparation

Step 1

1. In a small saucepan combine 1/4 cup lemon juice and 5 tablespoons sugar for the lemonade layer. Put over medium heat, stirring constantly until the sugar dissolves.

2. Once sugar is dissolved pour into a medium bowl and add 1 1/3 cups yogurt, whisking until smooth. Place lemonade mixture in fridge.
3. For the raspberry layer, combine raspberries, sugar and water in a medium saucepan and heat over medium heat bringing mixture to a low simmer, stirring for 2-3 minutes until the raspberries are soft.

4. Put raspberry mixture in medium bowl and add lemon juice. With the back of a wooden spoon or potato masher, smash the raspberry mixture until somewhat pureed, it's nice to have some chunks in the pops. Place raspberry mixture in the fridge for about 30 minutes to cool down. (Do not add the yogurt quite yet)

5. Once the raspberry mixture is cooled, add the remaining 1 cup of yogurt and mix well.
6. Take your Popsicle molds or Dixie cups and being to layer between the raspberry mixture and the lemonade mixture until the molds or cups are filled. When they are filled add the lids or at this point you would add a craft stick to each cup in the center.

7. Freeze overnight, and when ready to eat run under water to loosen the sides of the mold or cup.
