David's Cheesy Cornbread

Ingredients

  • 1 package corn muffin mix
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Colby Jack cheese
  • 1 egg
  • Milk, as label directs for muffins

Preparation

Step 1

Empty corn muffin mix into a medium mixing bowl. Save about 1 Tbsp. of shredded cheese for topping and stir remaining cheeses together into muffin mix.

Mix in egg and milk, following label directions. Pour batter into a greased square baking dish or cast iron pan. Bake at 400ºF for 15 minutes.

Sprinkle reserved cheese over top and bake for 10 minutes longer, or until cornbread is browned and firm.
