Spinach Salad (The Magnolia Hotel's)

Ingredients
- Dressing:
- 1 medium onion, grated
- 1 cup oil
- 2/3 cup sugar
- 1/3 cup catsup
- 1/4 cup red wine vinegar
- Salad:
- 1 large bunch fresh spinach, washed thoroughly, patted dry and torn into bite-size pieces
- 1-8-ounce can water chestnuts, drained and chopped
- 1 cup fresh bean sprouts
- 1/4 cup (or more) chopped cooked bacon
- 2 hard cooked eggs, grated.

Preparation
Step 1
For dressing: Combine ingredients in jar with tight-fitting lid and shake well.
For salad: Combine spinach, water chestnuts, bean sprouts and 1/4 cup bacon in large salad bowl and toss gently. Add dressing to taste and toss again. Sprinkle with grated egg (and additional bacon, if desired) and serve.
