Lamb Kofta

Delicious on skewers as kabobs or make into burgers if you wish.

I skewer them and offer them with pitas or wraps and hummus, tzatziki, lettuce and tomato sambal.

Ingredients

  • 1 small onion
  • 1 lb. ground lamb
  • 2 Tbsp. curry paste
  • 2 Tbsp. plain yogurt
  • oil, for basting

Preparation

Step 1

Soak wooden skewers in water if making kabobs.

Put the onion if a food processor and chop finely. Add the lamb and process briefly to chop the ground meat further.

Add the curry paste and yogurt and mix well. Divide the mixture into 8 equal portions.

Press and shape the mixture into 8 sausage shapes (or burgers) and push each one onto a skewer, pressing the mixture firmly so that they hold their shape.

Chill kabobs, or patties for at least 30 minutes.

Broil on an oiled rack over hot heat turning frequently. Baste the kebobs with oil as required.

Transfer to serving dish and garnish with cilantro.
