Potato Salad

Ingredients

• 1/2 c salad oil
• 1/2 c cider vinegar
• 1 Tbsp lemon juice
• 2 Tbsp prepared mustard
• 3 oz sugar
• 1 Tbsp salt
• Tobasco sauce-few drops
• 12 eggs hard boiled
• 1 lb celery
• 8 oz onion chopped
• 1/2 tsp pepper
• 2 c mayonnaise
• 10 lb peeled potatoes cooked and diced

Preparation

Step 1

Make a marinade of oil,vinegar,lemon juice and seasonings
Add to warm potatoes and mix gently
Marinate until cold
Add eggs,celery,onion and pepper to opotatoes
Mix lightly
Add mayonnaise and mix carefully to blend
Chill at least 1 hour
