Ingredients

  • 4 white fish steaks (halibut, mahi mahi, congrio)
  • 3 T. olive oil
  • 4 cloves of garlic, minced
  • 1 red onion, sliced
  • 1/4 cup white wine
  • 1 large can of stewed diced tomatoes
  • Juice of one lemon
  • 3 bell peppers (any color) sliced
  • 2 T. cumin
  • 2 t. cinnamon
  • 1 T. green chili powder
  • 1/2 - 1 t. red pepper flake
  • 1 T. fresh oregano, chopped (or 1 t. dry)
  • 1 T. fresh cilantro, chopped (or 1 t. dry)
  • 2 bay leaves
  • 1/4 cup water
  • Salt and pepper to taste

Step 1

In a large pot saute onions and garlic in olive oil. Add wine and reduce. Add the rest of the ingredients and bring to a boil. Add fish and cover. Cook for approximately 25 minutes or until fish is cooked. If you use frozen fish, add some time to cook. Remove bay leaves and serve.
