- 4 flour tortillas
- 2 large eggs
- 1 cup milk, half & half, or cream
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 teaspoon ground cinnamon
- Fruit
- 1 to 1 1/4 cups diced apples (1 to 2 apples)
- 1/2 cup diced dried apricots or raisins
- 2 tablespoons sugar
- 1 tablespoon melted butter
- 1/2 teaspoon cinnamon
Preparation
Step 1
1) Grease 4 individual baking dishes, about 3/4-cup capacity each.
2) Cut each tortilla into 6 to 8 wedges, depending on size, and place them into the cups, layering the wedges around the edges.
3) Whisk together the eggs, milk or cream, 1/3 cup sugar, vanilla, salt, and 1 teaspoon cinnamon.
4) Divide among the 4 baking dishes. Let the mixture rest at room temperature for 30 minutes.
5) Preheat the oven to 350°F.
6) Mix together the apple, apricots or raisins, 2 tablespoons sugar, melted butter, and 1/2 teaspoon cinnamon.
7) Divide among the baking cups, mounding in the middle.
8) Bake for 25 to 30 minutes, until the custard reaches 160°F and is set in the center.
9) Remove from the oven, and serve warm.
