Mini Spinach Fritata

Ingredients
- 1 C ricotta Cheese
- 3/4 C Parmesan Cheese Grated
- 2/3 C chopped fresh mushrooms
- 1 pkg. (10 oz) frozen chopped spinach (thawed and squeezed dry)
- 1 egg
- 1/2 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 24 slices pepperoni

Step 1
In a small bowl, combine first eight ingredients. Place a slice of pepperoni in each of 24 greased mini muffin cups. Fill muffin cups 3/4 full with cheese mixture.
Bake 350 for 15 min. or until a toothpick comes out clean. Carefully run a knife around edges of muffin cups to loosen. Serve warm.
