Mini Spinach Fritata

Ingredients

  • 1 C ricotta Cheese
  • 3/4 C Parmesan Cheese Grated
  • 2/3 C chopped fresh mushrooms
  • 1 pkg. (10 oz) frozen chopped spinach (thawed and squeezed dry)
  • 1 egg
  • 1/2 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 24 slices pepperoni

Step 1

In a small bowl, combine first eight ingredients. Place a slice of pepperoni in each of 24 greased mini muffin cups. Fill muffin cups 3/4 full with cheese mixture.

Bake 350 for 15 min. or until a toothpick comes out clean. Carefully run a knife around edges of muffin cups to loosen. Serve warm.
