Ingredients
- 1 tbsp olive oil
- 2 tbsps butter
- 2 lbs sm boneless chicken breasts
- 1/2 cup flour, mixed with 1/2 tsp salt and 1/2 tsp pepper
- 1 cup Marsala or similar red wine - split into 2 1/2 cup portions
- 1 cup chicken broth
- 16 oz Baby Bella mushrooms
- 2 tbsp corn starch mixed into 1/4 cup milk

Preparation
Step 1
1. Add olive oil and butter to pressure cooker; brown until sizzling
2. Dip chicken breasts in seasoned flour until they are well coated and add to cooker, browning well on both sides
3. Pour in 1/2 cup of wine, broth and mushrooms
4. Lock pressure cooker and cook on high for 10 mins
5. Perform quick release and remove lid
6. Add other 1/2 cup wine and corn starch in milk or cream
7. Stir until thickened
