Ingredients

  • LOAF:
  • 1 cup sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1/2 cup milk, mixed with 1/3 cup lemon juice
  • pinch of salt
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • SAUCE:
  • 1/3 cup lemon juice
  • 1/4 cup sugar

Preparation

Step 1

Preheat oven to 350*. Grease and flour one loaf pan.

Loaf:

Cream sugar and shortening. Add eggs one at a time.

Mix milk with 1/3 cup lemon juice and then pour into mixing bowl and mix gently.

Sift together flour, baking powder and salt. Add to mixer in two batches and mix to combine.

Pour into loaf pan and bake at 350* for 45 minutes.

Sauce:

In a saucepan, combine lemon juice and sugar. Bring to a boil until sugar is dissolved.

Pour over hot cake.
