Ingredients
- LOAF:
- 1/2 cup butter
- 2 cups sugar
- 4 eggs
- 2 cups sour cream mixed with 2 tsp. baking powder
- 3 cups flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- TOPPING:
- 1 cup coconut
- 1 Tbsp. cinnamon
- 1/2 cup brown sugar
Preparation
Step 1
Preheat oven to 350*. Grease and flour two loaf pans.
Topping:
Mix coconut, cinnamon and brown sugar and spread on bottom of pans.
Loaf:
Cream together butter and sugar. Add eggs one at a time.
Mix in sour cream/baking powder mix.
Sift together flour, baking powder and salt. Add in two batches to the batter.
Pour batter over "topping" in the loaf pans. Cut through with a knife, bringing the topping through the batter.
Bake in 350* oven for 45 minutes, then reduce heat to 350* for 30 more minutes.
