Ingredients
- 4 boneless, skinless chicken breasts, pounded thin
- 4 oz soft goat cheese
- 1 cup reduced-fat, shredded Colby cheese (or regular)
- 1 egg
- 1/2 cup seasoned bread crumbs
Preparation
Step 1
1. Preheat oven to 375F. In small bowl, mix the goat cheese with the colby cheese with a fork until blended.
2. Spread 1/4 of the cheese mix onto each breast. Starting at short end of chicken, roll up each breast, secure with toothpicks.
3. In shallow bowl, mix the egg with 1 tbsp water. Place crumbs in another shallow bowl. Dip each chicken breast into egg mix, then coat with crumbs. Spray a baking pan with cooking spray. Place chicken in pan.
4. Lightly spray chicken with cooking spray. Bake 25-30 mins, or until heated through.
