Cornish Game Hen with Florentine Stuffing

Ingredients

  • 2 Hens
  • 2 Strips Bacon, Chopped
  • 2 Cloves Garlic, Minced
  • 1 Cup fresh Bead Crumbs
  • 1 Lg. Egg, Beaten
  • 1/2 Cup Sweet Onion, Chopped
  • 1/4 Cup Parmesan Cheese, Grated
  • 1/2 Cup Frozen Spinach, Thawed and Drained
  • 1 Tbls. Melted Butter
  • 2 tsp. Dry Chicken Broth
  • 1/8 tsp. Nutmeg (Freshly Grated is Preferred)

Preparation

Step 1

Preheat oven to 400 degrees.

Clean and pat the hens dry.

Sauté the diced bacon until browned, but not crisp
