Banana Coconut Bread

Ingredients

  • 2 med over-ripe bananas, mashed
  • 1/2 cup mayo / dressing (I used olive oil mayo)
  • 1 egg
  • 1 1/2 cups AP flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 1/3 cup flaked coconut
  • 1/3 cup chopped pecans

Preparation

Step 1

Preheat the oven to 350° F.

In a large bowl, mash the bananas and mix in the mayo and egg with a whisk. Add the dry ingredients to the wet mixture and stir JUST until blended; the mixture will be thick. Add the coconut and pecans - gently incorporate, just a few stirs.

Spray a loaf pan and add the mixture.

Bake for 60-70 minutes or until a toothpick comes out clean. Remove from the pan and let cool completely. Store in the refrigerator.
