Ingredients

  • 2 Cups Sugar
  • 2 Cups Flour
  • 2 Teaspoons Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • 4 Eggs
  • 1 Cup Vegetable Oil
  • 4 Cups Grated Carrots (8 Medium Carrots)
  • 1/2 to 1 Cup Pecans
  • Frosting
  • 4 Tablespoons Butter
  • 8 Ounces Cream Cheese
  • 4 1/3 Cups Powdered Sugar
  • 2 Teaspoons Vanilla

Preparation

Step 1

Thoroughly mix sugar, flour, soda, salt and cinnamon. In large bowl beat eggs until frothy. Slowly beat in oil. Gradually add flour mixture beating until smooth. Mix in carrots and nuts.
Pour into 3 8-inch greased floured pans. Bake at 350 for 25 to 30 minutes. Cool before frosting.

Frosting

Blend butter and cream cheese. Gradually add 4 1/2 cups powdered sugar, beating until smooth and creamy. Stir in 2 teaspoons vanilla flavoring.
