Ingredients
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. solid vegetable shortening
- 1/2 c. (1 stick) unsalted butter, softened
- 1/2 c. granulated sugar
- 1/2 c. packed light-brown sugar
- 1 large egg
- 1 tsp. vanilla extract
- 2 Tbsp. instant coffee
- 4 tsp. warm water
- 1 (10 oz.) pkg. Hershey Kisses-I used the chocolate meltdown flavor....and made sure they were frozen SOLID before starting the cookie dough

Preheat oven to 375 degrees.
In small bowl, combine flour, baking soda and salt; set aside.
In large bowl, beat together shortening, butter and both kinds of sugar. Beat in egg and vanilla.
Dissolve coffee in 4 tsp. warm water; stir into butter mixture, then stir in flour mixture until soft dough forms.
With floured hands, roll dough into 1" balls. Place on nonstick baking sheets or baking sheets lightly sprayed with nonstick cooking spray, which is what I did).
Bake @ 375 degrees for 10 minutes. Remove from oven and immediately press 3 mini kisses into top of each. Let cookies cool on the cookie sheets a few minutes before removing to racks to cool completely.
**While cookies were baking, I unwrapped amount of Hershey Kisses I needed and placed them on plate, then back into freezer they went until cookies came out of oven. To speed chocolate setting up, chill cookies in refrigerator few minutes.
