Yuletide Pie

Wonderful light minty dessert for a Christmas or Thanksgiving meal. Contains alcohol.

Ingredients

  • CRUST:
  • 1 1/4 cups of chocolate wafer crumbs, crushed
  • 3 Tbsp. melted margarine
  • FILLING:
  • 24 large marshmallows
  • 1/2 cup milk
  • 1 1/2 ounces white Creme de Cacao
  • 1 1/2 ounces Creme de Menthe
  • 7 drops green food colouring
  • 1 pint whipping cream

Preparation

Step 1

Place mixing bowl and beaters in freezer in preparation to whip cream.

Crush cookies and blend with margarine and Creme de Cacao. Reserve 2 tablespoons of crumbs for top of pie.

Press remainder of crumb mixture into bottom of pie plate.

Melt marshmallows in milk over low heat. Add Creme de Menthe and food colouring. Let cool.

Whip cream until stiff peaks form and fold into marshmallow mixture.

Pour into crust and refrigerate until set.

Sprinkle reserved cookie crumbs over top and garnish with a few mint leaves.
