Coffee Mocha Treat

One of my favourite desserts from my childhood and it's fun to make.

Ingredients

  • FILLING:
  • 1 pkg. Social Tea biscuits
  • 2 cups strong black coffee, cooled
  • 4 Tbsp. icing sugar
  • 3 Tbsp. custard powder
  • 1/2 cup butter, room temperature
  • 3 egg yolks, room temperature
  • 1/4 cup coffee, cooled
  • 4 Tbsp. sliced almonds

Filling:

Beat butter, icing sugar and custard powder together. Add egg yolks one at a time, beating well. Add 1/4 cup coffee gradually.

Assembly:

You are going to build a three or four layered dessert. Your base layer should be 4 by 3 biscuits, or 4 by 4 biscuits. Before you start, count your biscuits to ensure you have enough to complete your layers.

Dip the ends of the first layer of biscuits quickly in and out of the cold coffee. Lay dipped biscuits on a flat dish lined with waxed or parchment paper. Spread filling on top, and repeat for each layer.

When layers are complete, use the filling to ice the sides of the cake, and sprinkle nuts on top.

Refrigerate for at least 3 hours or until ready to serve.
