Chocolate Mousse


The first time I made this it turned out perfectly and its relatively easy.

Can be made a day ahead.

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup hot water
  • 1 tsp. instant coffee, ground to a fine powder
  • 8 egg yolks
  • 8 egg whites
  • 1/2 cup granulated sugar
  • Whipped cream, to garnish
  • Chocolate shavings or berries, to garnish

Preparation time 30mins
Cooking time 40mins


Step 1

Put mixing bowl and beaters in freezer to get cold.

Separate eggs.

Melt chocolate and hot water in a double boiler over hot, not boiling, water. Stir in coffee granules.

Beat egg yolks until light. Add to chocolate and beat until there are no lumps. Remove from heat and let cool.

Beat egg whites until stiff. Gradually add in sugar. Fold into chocolate mixture.

Put in serving dishes and chill.

Before serving, add whipped cream and chocolate shavings or berries on top.
