Blueberry Stuffed French Toast

Ingredients

  • French Toast:
  • 1 loaf french bread, crusts removed, cut into 1 inch cubes
  • 8 oz cream cheese - cut into small cubes
  • 8 eggs
  • 1/4 cup syrup
  • 1 1/4 cup milk
  • 1/2 cup blueberries
  • Blueberry Sauce:
  • 1 cup sugar
  • 2 tbsp cornstarch
  • 1 cup water
  • 1 cup blueberries
  • 2 tbsp butter

Step 1

Butter a 9x13 dish. Arrange half the bread cubes in the pan. Scatter cream cheese and blueberries over the bread. Top with remaining bread. Whisk eggs, maple syrup and milk. pour over bread and press down evenly. Cover and chill overnight. Bake (covered) at 350 degrees for 30 minutes, then uncover and bake for 30 more minutes.

Sauce:

Stir together the sugar, cornstarch and water in a saucepan. Cook over medium hear, stirring occasionally, for 5 minutes, until thickened. Stir in blueberries and simmer 10 minutes. Remove from heat. Stir in butter.

Divide french toast onto 8 plates. Spoon blueberry sauce on top and garnish with twist of lemon.
