Ingredients
- SALAD:
- 2 cups quinoa
- 2 cups water
- 1/4 tsp salt
- 1 star anise
- 1 tsp cumin
- 1 tsp cinnamon
- Half of a diced red pepper
- Half of a diced yellow pepper
- 1 cup dried cranberries
- 1 cup diced dried apricots
- 1 cup toasted nuts chopped, (pistachio and pine nuts)
- DRESSING:
- 1/2 cup of fresh orange juice
- 1/2 cup of olive oil
- Juice of half a lime
Preparation
Step 1
Cook quinoa, water, salt, star anise, cumin and cinnamon until water is absorbed.
Mix well.
Add peppers, cranberries, apricots and toasted nuts.
Toss well
Dressing:
Mix orange juice, olive oil and lime juice. Shake in a jar and pour over salad.
