Ingredients
- Filling:
- 1 1/2 cups chocolate wafer crumbs
- 1/3 cup butter
- 1 tblsp sugar
- 1/2 tsp cinnamon
- 2 pkg Mexican chocolate
- 3 8 oz pkg cream cheese
- 2 tblsp espresso pwdr
- 1/2 cup hot water
- 1 cup sugar
- 1/4 tsp salt
- 2 tblsp cornstarch
- 1/2 cup sour cream
- 3/4 cup cream
- 1 tsp vanilla
- 1 tblsp amaretto
- 4 eggs
- Glaze:
- 1/2 cup cream
- 4 oz chocolate chips
Preparation
Step 1
Preheat the oven to350*
Mix the crust ingredients and press into pan. Bake for 12-15 minutes to set.
To make the filling melt the chocolate in water with the espresso powder added. Stir and set aside. Cream the cheese and then add a mixture of sugar, salt ,cinnamon, and cornstarch. Then add the eggs and vanilla. Add the sour cream, whipping cream and chocolate mixture.
Bake @350 for 30 minutes then 250 for 1 1/2 hours till center is set.
Mix the glaze by heating the cream to a simmer and adding the chocolate. Stir to combine and spread on cooled cake.
