*Strawberry Cheesecake Crepes

  • For crepes:
  • 1 8 ounce tub of flavored cream cheese, strawberry
  • 1/2 cup powdered sugar
  • 2 Tbs. lemon juice
  • 1 tsp. vanilla
  • 4 Tbs. strawberry jam or preserves
  • 2 cups sliced strawberries
  • 1 batch crepes
  • 1 cup flour
  • 2 Tbs sugar
  • 1/2 tsp salt
  • 1 1/2 cups milk
  • 4 large eggs
  • 3 Tbs. butter

Cooking time 35mins


Step 1


Combine flour,m sugar, salt, milk, eggs and butter. Can mix with electric mixer or whisk by hand.
Let batter sit for 15 minutes to overnight.

Heat a 8-10 inch skillet over medium heat. Can use small amount of butter in skillet. Add 1/3 cup batter and swirl to cover bottom of skillet. Cook until crepe is golden brown.

Loosen edges of crepe with rubber spatula, then quickly flip. Cook until golden brown, then slide out of skillet. Repeat for rest of crepes.

Cream Cheese Filling:

Mix cream cheese, powdered sugar, lemon juice, and vanilla in bowl.

Spread 1 Tbs. jam onto crepe
Add 1/4 cup cram cheese mixture and some strawberries in the crepe, roll and serve.

Can add some sliced strawberries and powdered sugar to top.
